UX Process
At the risk of sounding like I'm hitting catchphrase bingo, I structure things to be a mobile-first, prototype-first department, with a heavy focus on motion and design.

Steps
Call them deliverables, or progressively toss stuff out and focus on the iterative product, here are some of the steps my team and I take:
interviews • competitive analysis • personas • mental models / content strategy • sitemap • wireframes • prototypes • visual design • microinteraction prototyping and transitions • testing • functional documentation

Software
Software changes like the wind, but currently we're a Sketch shop (supporting legacy work in Axure, Indesign and Omnigraffle). Prototyping is InvisionApp and Flinto, but we're always looking to see what else people come up with.
